This image is a DNA photograph. It was captured as part of the beerDNA series; a collaboration with Maine craft breweries to showcase the beauty of an integral part of what makes each brewery so unique, their yeast. Yeast samples were collected from 16 different Maine breweries, processed in a molecular lab and photographed.
Did you know? Yeast is a critical part of the brewing process in that it ferments the sugars released from grains and converts them to alcohol. Many breweries use different strains of yeast, or propagate their own house strains, adding to the complexity and originality of the beers. Yeast is also an environmental powerhouse. It plays critical roles in ecosystems such as decomposing biological material and degrading environmental pollutants.
Brewer’s Statement: We chose this yeast strain to brew El White Camino, our light and highly crushable Mexican lager. The goal for this beer was to make everything as subtle and clean as possible, so a strain known for a clean fermentation and a crisp finish seemed like a good choice. I enjoy the soft, simple profile this yeast exhibits, and its ability to ferment well then drop out, leaving a bright, sparkling beer to enjoy. – Greg Abbot, Head Brewer
